About the event

An EXCLUSIVE foraging event, where our lucky guests will be welcomed with a guided foraging session before heading back to our amazing fireside dining space, where our finds will be cooked up alongside other amazing wild ingredients to create a feast like no other!


This course is designed to get you as involved as possible - this includes identifying, picking and tasting a range of wild species that will be found on the day, which will then be included in your evening meal!


The focus with all of our workshops is on the 4 'F's of Foraging: Fungi, Fruit, Flowers and Foliage. We aim for an array of these elements on every session we run (weather and season permitting!)

What To Expect

Events like these don't happen all the time and we want to make it as special as possible for those attending. This is undoubtedely the highlight of our workshops calendar, giving us an opportunity to flex our culinary skills, show off the finest foraged ingredients and enjoy a celebratory atmosphere!

DURATION: 6+ hours (3 hours of foraging, followed by an extension sit-down dining experience)


After the event, you will be sent a follow-up email containing a list of everything we found on the day and a full menu. Please do not expect photos or descriptions in this email - it is purely a list for reference purposes, and we find it helps people do further research in their own time.


At the end of the session, there may be a small selection of our wild products and workshop vouchers available to purchase (card and cash accepted). This is a recent element of our events after enough attendees made enquiries about it - there is no pressure to buy anything having already bought tickets but sometimes people want a souvenir to take with them! Please speak to your tutor about this at the end.

Canapé:

Lacto-fermented Hen of the woods mushroom, sea lettuce, mugolio, spruce crouton


Wild Mezze:

  • Nettle seed sourdough; Fermented wild garlic whipped butter; Dulse seaweed marmalade; Fermented hosta; Clustered domecap mushroom and St. George’s mushroom pâté; Damson umeboshi; Venison prosciutto; Bilberry-gin-cured smoked pigeon breast

  • Siberian honey garlic cured egg yolks, bolete jam, nasturtium, borage, wild garlic honey

  • Lobster ravioli, mussel broth, pineapple weed, periwinkles, sea coriander

  • Chicken of the woods and dryads saddle nuggets, alexanders & wild garlic kimchi mayo, elderflower-pickled sea sandwort, sea purslane

  • 'Anaemic Mary' palate-cleanser shooters

  • Venison carpaccio, yarrow , parmesan, marsh samphire powder, rocket

  • Venison, wild garlic and angelica seed sausage; alexanders seed chimichurri; thistle puree; sea spray

  • Sea aster, marsh samphire and common hogweed

  • Himalayan balsam flower salad and blackberry dressing

  • Golden chanterelle and parasol mushroom creme brulee, dryads saddle cream, toasted hogweed seed brittle, oxalis leaf

  • Sea buckthorn jelly, meadowsweet icecream, fermented blackberry, japanese wineberry, blackcurrant, gooseberry


Pre-drinks:

Sparkling sea buckthorn wine

Elderflower kombucha and soda

Kelp and Birch Martini (Birch by Buck & Birch)

Wild drinks served with the meal:

Mirabelle wine

Damson wine

Nettle cordial and soda

Who Is This Workshop For?

An element of the day will be spent on your feet, covering a fair distance, often up to 2km on uneven ground, so consideration for mobility issues will be required before buying tickets. Children are not able to attend these sessions. No previous foraging experience is required for this event.


We strongly believe that foraging is for everyone, with all demographics welcome, regardless of age, ability, gender or ethnicity.
